Italian Almond Cookies

These are made with 100% homemade almond paste and rolled in thinly sliced almonds.
In your first bite you will think you've gone to heaven!
One half of these cookies have chocolate and sprinkled with powdered sugar.

Did you know that making these Italian Rainbow Cookies(which are not really a cookie at all) actually takes about a total of 4 hours prepare? This is why I don't make these as often as I'd like. So, when you see me offering them, grab them while you have the chance!

These Italian Cookies are more like the shape & texture of a very soft & moist cake.
*These are baked & prepared just as you
would a cake.
Throughout generations these have been called a "cookie" but definitely not a cookie at all!
They are lightly filled with raspberry jam in between layers of homemade almond paste & topped with my homemade
dark chocolate frosting.
**Great cold, even frozen as they are still easy to eat since from the freezer they thaw quickly.
